Surprise and delight your guests with Smoked Desserts. These innovative
treats, such as smoked chocolate mousse or smoked fruit compote, are perfect for special occasions or for those who love to experiment with unique dessert flavors.
Recipe 1: Smoked Chocolate Mousse
Ingredients:
● 8 oz dark chocolate, chopped
● 4 large eggs, separated
● 1/4 cup granulated sugar
● 1 cup heavy cream
● 1 tsp vanilla extract
● Wood chips (cherry or apple work well)
Instructions:
1. Melt the Chocolate: Melt the dark chocolate in a heatproof bowl over a pot of simmering water, stirring until smooth. Remove from heat and let cool slightly.
2. Whip the Egg Yolks and Sugar: In a separate bowl, beat the egg yolks with the granulated sugar until pale and creamy. Stir in the melted chocolate and vanilla extract.
3. Whip the Egg Whites: In another bowl, beat the egg whites until stiff peaks form.
4. Fold Together: Gently fold the whipped egg whites into the chocolate mixture until well combined.
5. Whip the Cream: In a separate bowl, beat the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture.
6. Chill: Spoon the mousse into serving glasses and refrigerate for at least 2 hours, or until set.
7. Add Smoke: Before serving, use your Bon Apperoo™ culinary smoker to add a touch of smoke to the chocolate mousse. Load the smoker with cherry or apple wood chips and follow the instructions to infuse the mousse with smoke for about 1-2 minutes.

Recipe 2: Smoked Fruit Compote
Ingredients:
● 2 cups mixed berries (strawberries, blueberries, raspberries)
● 1/4 cup sugar
● 1 tbsp lemon juice
● 1 tsp vanilla extract
● Wood chips (apple or cherry work well)
Instructions:
1. Prepare the Fruit Compote: In a saucepan, combine the mixed berries, sugar, lemon juice, and vanilla extract. Cook over medium heat, stirring occasionally, until the berries have broken down and the mixture has thickened, about 10-15 minutes.
2. Cool: Remove the compote from the heat and let it cool to room temperature.
3. Add Smoke: Transfer the compote to a shallow dish. Using your Bon Apperoo™ culinary smoker, add the desired wood chips (apple or cherry work well) and follow the instructions to infuse the compote with smoke for about 3-5 minutes.
4. Serve Immediately: Enjoy the Smoked Fruit Compote as a topping for ice cream, yogurt, pancakes, or as a standalone dessert.
